In the Edward Scissorhands script, which was written by Caroline Thompson, there are around 180 words attributed to Edward Scissorhands. This is by my count of the Edward Scissorhands script on IMSDb.
I counted the words twice, and got 183 the first time and 179 the second time. It’s also worth noting that, in photocopies of the original script, words such as “Good bye” appeared as two words - “Good” and “bye” - so it’s not possible to come to a specific concrete answer.
However, it’s safe to say that Johnny Depp, despite playing the titular character, has fewer words than one would initially expect.
